Deluxe cooks hamper contains a 500ml bottle of organic extra virgin olive oil, a jar of za’atar zesty thyme herb mix, and a 500g box of delicious Medjoul dates, 150g raw almonds, a jar of za’atar, 200g Freekah and also 200g Matfoul (giant couscous). The olive oil is organic, fairtrade and ethically sourced, made from hand-picked Palestinian olives. Significantly, this rich, peppery oil was the world’s first olive oil to have Fairtrade certification. Sourced from small-scale farmers in the West Bank, it won a Great Taste Award in 2022. Perfect for cooking with or as a dressing.
Zaytoun Za’atar Zesty Thyme Herb Mix uses an indigenous Palestinian variety of thyme. Thyme, toasted sesame, sumac, and sea salt are mixed by hand. The result is a mouth-watering herb mix. It’s not only a seasoning but also a topping, or even a dip. Try it the traditional way, with olive oil and freshly baked bread. Why not use it as a seasoning for chicken, roast lamb, fish, and also vegetables? Palestinian folklore believes that za’atar aids concentration; because of this children often go to school with olive oil and za’atar-soaked bread as part of their lunch. Za’atar is the Arabic name for the herb we call thyme.
The raw almonds are not only picked but also shelled by hand. Harvested in late Summer, and sun-dried, these almonds are certainly full of the season’s sweetness.
The size and rich caramel succulence mean that Medjoul dates are “The King of Dates”. Not only high in fibre and potassium but also with a natural sweetness. They are a delicious treat at any time of the day. Enjoy simply with a cup of coffee or as an added luxury to both desserts and cheese boards.
Matfoul is a traditional Palestinian grain made from both bulgar and whole wheat flour. Its firm texture and nutty flavour make it a wonderful alternative to other grains.
Freekeh is durum wheat that is harvested whilst still green and roasted on an open fire. It is rubbed (fareek) to remove the husk and reveal the aromatic grain packed with protein and fibre. Traditionally freekeh is slowly simmered in stock for a nourishing soup – a Palestinian staple for centuries. However, today it is often used in pilaf, risottos and salads.
